Capers

With a pungent flavour similar to mustard and pepper, capers add a peculiar aroma and bitterness to many culinary dishes.

Native to the Mediterranean, this spiny shrub (Capparis spinosa) is also cultivated in France, Spain and Italy. Often used in local seafood recipes, capers are also commonly used in tartare sauce and pizza toppings.

Did you know?
Capers are not seeds or fruits but unripe flower buds that have been picked from the plant Capparis spinosa and then pickled in vinegar. The flower buds have been used as a food flavouring for thousands of years.
