Pumpkins, squashes and gourds
Gem Store Pasta
Preparation and cooking time: 30 mins - 1 hour
Ingredients
You will need:
• 2 tbspns olive oil
• Gem store squash, de-seeded and diced
• 1 onion, peeled and finely chopped
• 2 garlic cloves
• 400g can chopped tomatoes
• 250g penne pasta
• 100g baby leaf spinach
• 50g parmesan shavings
• Salt and freshly ground black pepper
Method
Heat the oil in a saucepan and add the squash and onion, cook over
a moderate heat for approximately 5 minutes.
Add the garlic and cook for a further 2 minutes, then add the tomatoes
and season well.
Cover with a lid and simmer until the squash is tender.
In the meantime cook the pasta according to the pack instructions,
then drain reserving 3 tbspns of the cooking liquor and return to
the saucepan.
Add the sauce and spinach.
Pile onto individual plates and top with parmesan shavings.
