Pumpkins, squashes and gourdsGem Store PastaPreparation and cooking time: 30 mins - 1 hour IngredientsYou will need: • 2 tbspns olive oil MethodHeat the oil in a saucepan and add the squash and onion, cook over a moderate heat for approximately 5 minutes. Add the garlic and cook for a further 2 minutes, then add the tomatoes and season well. Cover with a lid and simmer until the squash is tender. In the meantime cook the pasta according to the pack instructions, then drain reserving 3 tbspns of the cooking liquor and return to the saucepan. Add the sauce and spinach. Pile onto individual plates and top with parmesan shavings.
