Pumpkins and Squashes

Pumpkins, squashes and gourds

Hubble Bubble Pumpkin Pot

Preparation and cooking time: 35 - 45 minutes.
Easy to microwave

Ingredients

You will need:

• 2 leeks, sliced and washed
• 8 rashers of smoked bacon
• 350g/12oz pumpkin flesh, cubed
• 50g/2oz butter
• 1 chicken stock cube
• 250g/9oz long-grain rice

Method

Toss the leeks, bacon and pumpkin together in a large microwaveable bowl.

Dot the butter on the top and cover the bowl with clingfilm or a plate.

Pierce the clingfilm a couple of times and microwave on high for 5 minutes until everything’s hot and starting to cook.

Whilst the vegetables are cooking, bring a kettleful of water to the boil and make 700ml/1.25 pints of stock using the cube.

Remove the bowl from the microwave and uncover, watching out for the hot steam.

Tip in the rice and season with salt and pepper, then pour in the stock and stir to mix.

Cover the bowl again and microwave on high for 10 minutes. Give it a stir and microwave for a further 5-10 minutes until the rice is cooked.

Leave to stand for 5 minutes before giving everything a final stir. Serve straight from the bowl.
