Pumpkins, squashes and gourds

Pumpkin Pie Recipe

Ingredients

You will need:

• 175 g granulated sugar
• 1 tsp ground cinnamon
• 1/2 tsp ground ginger
• 1/4 tsp ground cloves
• 2 eggs
• Salt
• 300 g pumpkin puree
• 350 g evaporated milk
• Shortcrust pastry at required thickness/size of dish to be used

Method

Preheat oven to gas mark 7 (210ºC).

Mix together the sugar and spices in a bowl and add a sprinkle of salt.

Beat the eggs and stir in the pumpkin and then the sugar and spices.

Gradually add the evaporated milk.

Make a pastry case in a pie dish and then pour the mixture into the case.

Bake for 15 minutes.

Reduce temperature to gas mark 4 (180ºC) and bake for a further 40-50 minutes until a knife comes out clean.

Allow to cool.

Serves 4
