Pumpkin and Apple Soup Recipe
You will need:
• 1 onion
Chop the onions and garlic and add to the oil in a large saucepan.
Cook until onions translucent and then add chopped pumpkin, chopped apples and a sprinkle of sage.
Cook together for a few minutes.
Season with salt and pepper.
Add the apple juice and vegetable stock.
Bring to the boil, then simmer for 15-20 minutes.
Liquidise well and serve while hot with a dash of fresh cream and some crusty bread.
