Pumpkins, squashes and gourds

Pickled Pumpkin Recipe

Ingredients

You will need:

• 2 lb / 1 kg Pumpkin
• 2 tablespoons Sugar
• 1/2 teaspoon Salt
• 2 cups / 500ml Water
• 1/3 cup / 80 ml Vinegar
• 6 whole Cloves
• 1/4 stick Cinnamon
• Pinch of Nutmeg

Method

Wash the pumpkin and cut it in half.

Remove the seeds and peel.

Chop the pumpkin flesh into 1 cm cubes.

Mix together 1 tablespoon of the sugar, 1/2 teaspoon of salt and 250 ml of water.

Bring this to the boil and add the pumpkin cubes, return to the boil then turn off the heat, cover and leave to stand.

When this has cooled slightly, drain and place in a clean pickling jar.

In a separate pan mix together 250 ml water, vinegar, spices, a pinch of salt and 1 tablespoon of sugar.

Bring to the boil on a low heat.

Pour this warm marinade over the pumpkin cubes.

Cover and cool.

Ready to serve the next day.
